Custard Apple Pie

5 medium Mill Orchard apples, peeled and sliced
1/2 cup sugar
1/4 cup flour
3 Tablespoons custard powder
2 Tablespoons sugar
2 cups milk
1 teaspoon vanilla
1 packet short crust pastry

Cook the apples in a little water until soft, remove from the heat. Pour off the excess water and add sugar and flour, mix until combined. Make the custard by mixing the custard powder and sugar together in a jug. Very gradually add the milk, stirring constantly. Cook in the microwave for approximately 5 minutes, stirring every minute until very thick (constantly watch while cooking, not a nice mess to clean up if it overflows!) Roll out pastry to fit a 22cm flan dish and also for the top of the pie. Place pastry bottom into the greased dish and place cooked apple into this, then pour in the cooked custard. Place the pastry top over the filling and seal the edges. Cook for about 30 minutes at 200oC or until lightly golden brown. Dust with icing sugar......Yum!
