Apple Pizza

4 medium Mill Orchard apples, thinly sliced
4 Tablespoons butter
1 tsp vanilla essence
4 Tablespoons sugar
1 tsp lemon juice
1/4 tsp cinnamon
8 Tablespoons cream
4 Tablespoons caster sugar
1/2 quantity of pizza dough (easily made in bread maker)

Preheat the oven and pizza stone or oven tray to 220oC. Cook the Mill Orchard apple slices in butter over a high heat, continually stirring until they begin to brown. Add vanilla, sugar, lemon juice and cinnamon. Turn down the heat and cook until apple is golden brown. Add the cream and cook until cream coats the apple; set aside and cool. Divide pizza dough into 1/2, take one quarter and cut into 4 pieces. Shape each piece into a ball and then using a rolling pin flatten into 15cm circles. Place circles of pizza dough heated pizza stone or tray then sprinkle on some caster sugar, add some of the apple mixture on top. Repeat with the rest of the dough circles. Cook for 7 minutes.
